Avocado Ricotta Yogurt With Apple Crisp Granola

Virtual Potluck was recently given the opportunity to review a new product by Paleo People, and we were each sent four bags of their granola. I was skeptical about how good a granola could be with no grains and being gluten free, but once I opened the first bag I was a believer.

The Banana Nut Granola quickly became my favorite snacking obsession, with the Apple Crisp, Cacao Nut and Cappuccino Crunch to follow. The Cappuccino was my least favorite.

Banana Nut Granola

The Granola is packed full of fruits, nuts, berries, and seeds and is naturally sweetened. It can be eaten alone, or as a topping on ice cream or yogurt.

I happen to have quite a bit of yogurt, fresh ricotta cheese, and avocados in my kitchen this week, and for breakfast yesterday, I incorporated the three and topped off the recipe with a sprinkle of  Apple Crisp Paleo People Granola. It was a simple, yet delicious and fulfilling.

Paleo People Granola

 

Recipe For One:

1/2 Hass Avocado

1/4 cup low-fat plain yogurt

1/4 cup low-fat ricotta cheese

3 tablespoons Granola

Preparation:

Pulse avocado, yogurt and ricotta together on low in a food processor to keep it’s thick and creamy consistency. Sprinkle favorite granola on top.
