Roasted Tomato Crostini with Weissbier Cheese & Fresh Basil
4 servings
Ingredients:
12 1/2 inch slices Loaf fresh French bread or 4 slices Loaf Italian.
12 Cherry Tomatoes cut in half
12 fresh basil leaves
Olive oil to drizzle
Kosher salt
Freshly ground pepper
Weissbier Cheese, sliced thin with grater, enough to cover each piece of toast
Preparation:
Preheat oven to 375°F and lightly drizzle the baguette slices with olive oil on a sheet pan. Sprinkle with Kosher salt and freshly ground pepper. Toast in oven for approximately 4-5 minutes or until they begin to harden, not burn. Turn oven to broil. Take toast out of the oven and cover with the cheese slices. Add sliced cheery tomatoes, and return to the oven broiling for 2-3 minutes. Top with fresh basil and serve immediately with favorite beer or white wine.
