Easy Grilled Shrimp, Food Network (First shown on 30AEats.com May 2012)

We are big on grilling at our house, especially on holiday weekends. This Thursday our son graduated from high school Summa Cum Laude, and will be heading to Georgia Tech in August to begin college. I can’t tell you how proud we are of him! With family in town for graduation, and this being Memorial weekend, I was looking for quick and delicious recipes with easy clean up.

Whether you are cooking for one or a group, give this grilled shrimp recipe a try, and double or triple the recipe as needed. Add different spices if you wish based on your personal tastes; the sky is the limit. Grilling in foil is easy, and clean up is a snap.

Super Easy Grilled Shrimp:

Feeds two

Ingredients:

  • One pound of fresh shrimp
  • real butter, softened
  • parsley
  • garlic cloves
  • salt and ground pepper
  • red pepper flakes
  • fresh lemon

Preparation:

Mix 3/4 stick softened butter, 1 cup chopped parsley, 2 chopped garlic cloves, and salt and pepper in a bowl. Toss with the juice of 1 lemon. Add  1 pound unpeeled large shrimp and a big pinch of red pepper flakes. Fold together, then Divide between 2 aluminum foil packets. Grill over high heat, 8 minutes.

Note: To make the meal complete, serve with a fresh garden salad, and French bread to dip in any leftover sauce!
