I thought I knew most of what went on with the regions food + drink scene, but I missed out on the fact that we have Timber Creek Distillery located on a family farm just north of Destin in Crestview.

Finding the presence of a high-quality craft distillery located in the backwoods of Northwest Florida was music to my ears, or rather taste buds.

Camden Ford, one of the two owners and President of Timber Creek Distillery, stopped by my house the other day with some loot. The good stuff that also included a Bourbon Blending Kit which I immediately opened and began sampling.

I thought it was the perfect holiday gift for those over 21 who enjoy high quality spirits, and so he offered one for me to give away on 30AEats.com (see Rafflecopter below).

Timber Creek as a company formed in 2014 when the master distiller, Aaron Barnes, a Panhandle native now living in Destin, discovered that Camden, his neighbor, had a mutual interest in home beer brewing. Camden said, ” My family had recently moved into our vacation home to ease our lifestyle from California where I had been working for over 15 years in an engineering position in Silicon Valley. Aaron and I hit it off and decided to open a craft distillery.” Barnes (a real estate broker) began the search for possible locations putting their dream in motion. He found it on the banks of Juniper Creek in Crestview, in a barn behind his parents 26,000 square foot home, the home that appears on all of the Timber Creek bottles.

The limited edition Bourbon Blending Kit (only 500 were produced) features a selection of 100 percent single grain whiskeys and the Timber Creek Bourbon Blending Guide that walks consumers through the Timber Creek process, explains how the different grains contribute to the flavor of each bourbon, and shows exactly how to blend the different whiskeys. Included is also a list of mash bills for many popular Bourbon brands so connoisseurs can easily replicate the recipes for their favorite bourbon. How cool is that?

Each grain that is bottled is individually milled, mashed, distilled, barreled and aged to make 100 percent single grain whiskeys at Timber Creek Distillery. The barrels are hand-picked and the whiskeys blended to create Timber Creek’s unique bourbon flavor profile.

Camden said, “Today’s bourbon industry is dominated by a handful of large companies using mass production techniques that don’t produce the same individual high-quality bourbon created by craft distilleries. As a craft distillery, Timber Creek can experiment with new techniques and push the boundaries of innovation leading the way by offering new flavor profiles and new whiskey experiences to customers.”

Timber Creek’s Bourbon Blending Kit is comprised of all single grain whiskeys bottled at 100 proof, including:

  • 750ml bottle of 100% Florida Corn Whiskey
  • 375ml bottle of 100% Florida Wheat Whiskey
  • 375ml bottle of 100% Florida Black Rye Whiskey
  • 375ml bottle of 100% American Single Malt Whiskey

The blending kit also provides a graduated mixing beaker, stir rod, and a graduated pipette for precise mixing and blending of the bourbon.

Camden said,  “We take the best local fruits and grains from the Florida Panhandle and nearest Gulf Coast regions, and turn them into the finest craft spirits. We also take great pride in the hand making of every batch and hand bottling every bottle.”

For their vodka and whiskeys, Timber Creek uses local red soft winter wheat, local yellow #2 dent corn, and local Florida 401 black rye. The best Gulf Coast cane molasses is sourced right down the road in Louisiana for the rum. Soon Timber Creek will begin to incorporate many local fruits like strawberries, blueberries, peaches, and muscadines into their brandies. And, Timber Creek also offers a refreshingly delicious Apple Pie Rum and Coffee Rum with a kick. I am not a fan of sweet drinks and both won me over.

  8. Hey Susan, great pictures and story! A terrific cocktail this time of year is a Maple Bourbon Smash, which is a riff on an Old Fashioned. With a splash of fresh lemon and orange, it adds to the experience. Of course Tom would say, “straight up!”
